Want to make a treat that is sure to please a crowd in a jiffy on a hot summer day or evening? How about Mini Gluten Free Ice Cream Sandwiches?! All you need is some of your favorite Gluten Free ice cream, in your favorite flavor – vanilla, strawberry, chocolate or espresso and some Pamela’s Simplebites -Mini Gluten Free Cookies. Pamela’s makes three Gluten Free flavors – Chocolate Chip, Extreme Chocolate and Ginger Snapz. It just so happens I try to keep a bag or two of them in my Gluten-Free pantry just in case we want to have some fun with making spontaneous treats –

The other night I met up with a some of my new neighbors. We were sitting around the gazebo getting to know each other when someone said they had sweet tooth and a craving for a cool treat. Well, my light bulb went off and I said I’ll be back in a jiffy!
I looked throughout my kitchen and came up with this cute and easy treat –
Mini Gluten Free Sandwiches
You will need 2 cookies and about a tablespoon of ice cream per ice cream sandwich serving.
Take out the ice cream and the cookies and use a spoon to scoop out some ice cream and spread it on the cookie.
Make as many servings as you need or as many cookies as you have to make an ice cream sandwich.
If you have time put them into a freezer safe container and let them freeze before serving, even if it is only a few minutes. This will help them set and allow you to make the rest of the batch.
*Please note – I decided to make more to have on hand in the freezer. I wrapped them in cling wrap and then put them into a plastic- freezer safe container. They freeze well and are the perfect bite size Summertime treat.
Well I guess I need to make more because when I went back into the freezer to take some pictures to show you, they were GONE!
