Easy Gluten-Free Thanksgiving Stuffing

Wow! This year has flown by and I can’t believe that it is already Thanksgiving!  This year it is all about making everything “Super Easy”.  I decided to try Trader Joe’s Gluten-Free Stuffing Mix. It is in the Fearless Flyer this week for $5.99. The mix contains the toasted Gluten-Free bread cubes and seasoning.  I love my stuffing or dressing with a bit more heartiness so I like to add locally made fresh sausage.  I used sage sausage without the casing. You could also use rosemary garlic or something savory that will compliment the meal. I cooked the sausage up with olive oil, onion, fennel, and garlic.  I then tossed the bread cubes in a bowl with some melted butter, olive oil and the seasoning mix.  I added the mix to the pan with the sausage and then added the celery.  I added approximately 3/4 cup of Gluten-Free chicken broth to it and mixed well – add a little more if you like your stuffing/dressing a bit softer.

I preheated the oven to 350 and cooked it in the oven for 30-35 minutes.

1 box Trader Joe’s Gluten-Free Stuffing Mix

3/4 cup Gluten-Free Chicken or Turkey broth – Pacific Foods

1/4 cup +2 tablespoons olive oil

3-4 tablespoons of butter

1 medium yellow onion diced

3 garlic cloves chopped

3-4 stalks chopped celery

1 small fennel chopped and use the frond

1 lb sage or rosemary garlic sausage without the casing – pork or chicken is perfect!

I know what you are thinking, I am calling this stuffing when I cooked in on the stove and in the oven.  So technically it is dressing but call it what you will.  I call it deliciously super easy Gluten-Free Stuffing!

Happy Thanksgiving!
